<p><strong>Masa:</strong><br />
 <br />
4 tazas de harina<br />
1 taza de manteca vegetal<br />
1 taza de margarina <br />
1 cucharadita de sal<br />
1 ¼ taza de agua helada <br />
½ cucharadita de polvo de hornear </p>
<p><strong>Relleno:</strong></p>
<p>1½ taza de cebolla picada en cuadritos <br />
¼ de taza de aceite, aproximadamente <br />
½ k (1lb 2 oz) de carne molida <br />
Sal <br />
Pimienta <br />
Pimentón o páprika<br />
1 cucharadita de ají molido o al gusto <br />
2 a 3 huevos cocidos en trocitos <br />
Trozos de Aceituna (opcional)<br />
1 yema de huevo<br />
1 cucharada de leche<br />
Azúcar en polvo <br />
 <strong>PREPARACIÓN:</strong></p>
<p><strong></strong><br />
<strong>Masa:</strong> </p>
<p>Mezclar la harina, sal y polvo de hornear con la manteca y margarina. Trabajar la masa con un cortapastas o 2 cuchillos hasta que parezca avena. Usar las manos lo menos posible. Incorporar gradualmente el agua helada hasta formar una masa. Reposar en la refrigeradora hasta el día siguiente o mínimo 3 horas.</p>
<p><strong>Relleno:</strong><br />

Freír la cebolla en el aceite hasta que esté transparente. Agregar la carne y cocinarla hasta dorada. Sazonarla con sal, pimienta, pimentón o páprika. Mezclar bien. Retirar del fuego y enfriar. Estirar la masa con el rodillo y cortar discos de aproximadamente 10 cm (4 pulgadas) de diámetro con un vaso o cortador. Colocar una porción de relleno de carne en cada disco y colocarle un trozo de huevo. Si se desea se le coloca un trozo de aceituna. Humedecer los bordes del disco con agua y doblar el disco por la mitad cubriendo el relleno. Pegar los bordes presionando con los dedos. Colocar las empanadas en latas engrasadas y enharinadas. Mezclar la yema con la leche y barnizar las empanadas con esta mezcla. Llevar al horno de 400°F (200°C) durante 20 minutos hasta que se doren ligeramente. Enfriar y espolvorear encima con azúcar en polvo.</p>

<p><strong>Ingredientes:</strong><br />
3 o 4 kgs de papas blancas peladas, cortadas en rodajas delgadas, y remojadas en agua de sal que las cubra. (Depende del tamanio de su bandeja de hornear. Yo uso un pirex grande o una hoja grande de hornear galletas).<br />
250 grs de queso fresco (o un paquete de Feta para las que estamos en US) desmenuzado o cortado en tajadas delgaditas.<br />
1 bolsa de queso parmesano rallado (creo que es como 200 grs)<br />
2 latas de leche evaporada<br />
6 huevos<br />
1 barra de mantequilla o margarina (preferible mantequilla)<br />
3 o 4 dientes de ajo picados bien menuditos.<br />
sal, pimienta</p>
<p><strong>Preparacion</strong><br />
1. Mezclar los quesos en un tazon reservando un poco del queso parmesano.<br />
2. Batir los huevos con la leche evaporada en un tazon grande, sazonar ligeramente (recuerden que las papas remojaron en agua de sal y los quesos son salados<img src="http://gfx2.hotmail.com/mail/w4/pr01/ltr/emoticons/smile_thinking.gif" alt="" width="19" height="19" />).<br />
3. Escurrir las papas y secarlas lo mas posible con un panio de cocina; sazonar las papas con los ajos y la pimienta, mezclando bien para que todas las rodajas de papa tengan algo de ajo.<br />
3. Frotar el fondo de la fuente de hornear con la mantequilla y colocar las rodajas de papa una por una hasta cubrir el fondo de la fuente formando una capa uniforme. Cubrir esa capa de papas  con una capa de pedazos de mantequilla, espolvorear una capa uniforme de los quesos, echar un poco de la mezcla de huevos y leche batidos, y cubrir nuevamente con papas. Continuar hasta que la fuente este llena, terminando con una capa de mantequilla y del queso parmesano que reservaron al principio. Si les queda mezcla de leche y huevos pueden echarla toda antes de echar el queso parmesano. Es necesario colocar las rodajas de papa una por una para que el grosor del pastel sea uniforme y todas las papas cosan parejo (Si no, algunas quedan crudas mientras las otras estan bien cocidas<img src="http://gfx2.hotmail.com/mail/w4/pr01/ltr/emoticons/smile_sad.gif" alt="" width="19" height="19" />).<br />
4. Cubrir con una hoja de aluminio y hornear por 45 minutos a 400F ( o hasta que la papa este cocida hasta el fondo).  <br />
5. Retirar la hoja de aluminio y poner el horno en broiler entre 5 y 10 minutos para dorar la capa superior. <br />
Tiempo de coccion depende del horno y la altura&#8230; como no se va a desinflar (como las tortas) pueden chequear tanto como crean necesario&#8230;<img src="http://gfx2.hotmail.com/mail/w4/pr01/ltr/emoticons/smile_teeth.gif" alt="" width="19" height="19" /></p>
<p>Pueden variar la cantidad de los ingredientes a su gusto, dependiendo del tamanio de su fuente. Si la fuente es baja o plana, cocera mas rapido, si usan una fuente mas honda, demorara mas.  Ojala que les guste. 			<content:encoded><![CDATA[<p><strong>Camotes Glaceados &#8211; Rum-Glazed Yams</strong></p>
<p><strong>Ingredientes</strong></p>
<p>4 camotes anaranjados (yams) medianos, pelados y cortados en rodajas de 1 inch, 3 cm</p>
<p>3/4 taza azucar rubia, para medir tienen que presionar contra el fondo de la medida y lograr que el azúcar se compacte</p>
<p>6 CDA ron añejo, </p>
<p>1/8 cta canela molida</p>
<p>1/8 cta pimienta de olor, pimienta chapa molida (allspice) </p>
<p>1/8 cta nuez moscada molida, nutmeg</p>
<p>1/8 cta gengibre en polvo, kion, ginger. Para las personas que no tienen gengibre  en polvo, usen el doble de gengibre, kion fresco. </p>
<p>pizca de sal </p>
<p>2 CDA mantequilla</p>
<p><strong>Preparacion:</strong></p>
<p>Cocinar los camotes en el micro-ondas en un bol de vidrio con tapa sin agua,  (por fa usen vidrio porque el plastico se desintegra con el calor del micro-ondas y particulas microscopicas de plastico se fucionan a la comida)  hasta que esten cocidos pero que tengas cierta consistencia, mas o menos unos 8 minutos, eso depende del poder de cada micro-ondas.</p>
<p>En una olla pequena pongan los 7 siguientes ingredientes (eso es todos excepto la mantequilla) cocinen a fuego medio hasta que hasta que tenga consistencia de miel, unos 10 minutos, a este punto anadir la mantequilla y cocinar solo hasta que este todo integrado, un par de minutos. Poner los camotes en un bol y vertir la miel encima.</p>

<strong>INGREDIENTES</strong><br />

Higado de pollo, 1kilo, bien picado<br />
una cebolla mediana<br />
200 grs de tocino<br />
80 grs de margarina<br />
medio pimiento rojo<br />
1 tarro de leche evaporada<br />
1 hoja de laurel<br />
sal, pimienta al gusto<br />

<strong>PREPARACION</strong><br />

Picar la cebolla en cuadritos muy pequeños, poner la mantequilla en una olla y poner al fuego, agregue la cebolla y que se fria muy bien, agregar el pate, que cocine biennn. Agregar el pimiento picado y seguir friendo, agregar el tocino y la hoja de laurel, sazonar con salsita, pimienta . Agregue un poco de agua medio vasito, para que cocine bien, ese es el truquito, cuando ya huela rico, sacar  la hoja de laurel y licuar con la leche, se necesita poco mas de medio tarro.<br />
Dejar enfriar, y poner en 4 tappers pequeños de vidrio, con tapa. Se pueden usar los vasos de la mermelada si no hay tappers de vidrio.  Consumir uno por uno. Esto es para evitar que se malogre todo el pate.<br />

			<content:encoded><![CDATA[<p>Once again I forgot I had this thing and once again I&#8217;m back&#8230; for now?</p>
<p>I&#8217;m no hard core blogger and I have to admit that I am a bit spazy when it comes to all this blogging thing.  However, I&#8217;m hoping that this time I&#8217;d get to stick arround for a while.  My family is currently doing this thing where some of my aunts (my mom&#8217;s cousins) and my mom are sending eachother family recipes, picking one out of the bunch and all of them are cooking the &#8220;Chosen One&#8221; on a specific date.  Then they are supposed to share how it all turned out afterwards. </p>
<p>I&#8217;m psyched about that and I&#8217;m leaping at the oportunity of collecting the recipes.  I can&#8217;t cook to save my life so this is a good incentive to try.    I&#8217;m wanting to post them up here to compile them all in one place that will be easy to access rather than letting them sit in my email folders.   Feel free to try them out because I know for a fact that the ones my mom makes are yummy (those are the only ones I&#8217;ve had the pleasure to try but I&#8217;m looking forward to checking out my aunts&#8217; recipes).  There is one catch.  Each recipe is in Spanish.   I&#8217;ll do my best to get each translated to the best of my abilities, but for now each post will likely just be in spanish till I can get them translated one at a time.</p>

			<content:encoded><![CDATA[<p>Well, once again, a lot has happened. </p>
<p>Nathaniel turned 10 months today and is currently working on walking arround all over the place.  He has only ventured out 3 or 4 steps without any support and quickly proceded to plunge down to all fours nearly missing smashing his head on the floor.  Other that that, he is still running arround the edges of the furniture or making his way arround as long as someone holds his hands.  Let me tell you something though&#8230; he can move&#8230; fast!</p>
<p>He really is a doll.  While his Grandfather, Step-Grandma, Great Grandma, and Aunt Cindy were here he was just enjoying life.  He attempted (and succeeded) with the ever watchful grandfather following right behind him to climb up a set of stairs.  I had my heart on my throat and was floored by how easily he manouvered the stairs and my only comfort was that my father-in-law was right there to grab him.   Now Nate climbs over everything he can, people included.    We got him a &#8220;Musical Table&#8221; that he really seems to like but that still doesn&#8217;t stop him from climbing on the box it came on and playing with that. </p>
<p>Really&#8230; what is it with kids and boxes??  Packeging in general&#8230; I remember being very content popping all the bubbles in a piece of bubble wrap. </p>
<p>We also got him a small elmo doll.  He really seemed to like it when we first gave it to him.  My child is an elmo fan&#8230;  This, however, does not mean that he is going to get all things elmo.  I&#8217;d be crazy if I started him off in that path.  Maybe one or two things&#8230; ok so maybe three or four but I know that if I get him too hooked on something there is no getting out of it. </p>
<p>Anyways he played with elmo and tested us out.  He is starting to try out the whole &#8220;cause and effect&#8221; thing.  &#8220;If I throw elmo over the edge of the stroller, will mommy give him back to me?&#8221;  This is a game we are getting to know very well at our house.  When you tell him that if he throws it one more time that whatever it is he is doing this will be put away and it&#8217;s going &#8220;bye bye&#8221; he has the nerve to look at you with this &#8220;Oh REALLY?? Let&#8217;s test it out!&#8221; face!   Yesterday he had me laughing all day.  Every time I looked away from him he stuck the toy out of the stroller and held the poor thing in the air until I glanced back him and noticed that smile on his face (the I know what I&#8217;m doing here HAHAH smile) then quickly put the darn thing back in the stroller!  I know what you guys are probably thinking&#8230; 10 months? that kid is too young for that&#8230; I thought that too till he proved me wrong.</p>
<p>Well I better cut this short before no one wants to keep on reading. lol</p>
